“When I think about mushrooms, I think about potential. There’s a lot of potential in all sorts of different areas for mushrooms to not only help human society, but also the environment as a whole. Mushrooms are a great food source that I think a lot of cultures don’t really appreciate. Just from the standpoint of nutrition, mushrooms are extremely nutritious and provide us with the nutrients that many vegetables may not be able to provide us with. A big benefit of growing mushrooms is that they’re not like plants, they don’t grow in the earth — they have to grow off of something. They can be grown off of composted residue or even discarded agricultural waste products. No other food that I can think of right now can you grow off of waste! Growing mushrooms off of waste products is a very viable and sustainable way to grow food and to ensure that we can help feed greater population sizes.”
